Visual assessment of quality of fresh meat

To be able to fully appreciate meat while and after consuming it, one should pay attention to quality and freshness of the raw meat. So how to choose the best beef?

Fresh beef color ranges from pale red to dark carmine, while its tissue is crunchy and succulent. The fat should be firm, and the outer layer of it should be white. Ripe meat is slightly moist and has a fresh scent.

The meat of older animals has thick fiber, ruby-red color and a dark yellow color of fat. Unripe meat glistens upon cutting it and doesn’t have the specific smell. In no case can the meat be sticky, wet or slippery – these are the obvious signs of bad meat.
